You made a buy order instead of actually buying it. Escrow just means money set aside to buy stuff. You should see it if you look under Market > My Orders and if you cancel the order you'll get the money back from Escrow (minus a small fee).

In Inventory: Right Click > Split. Shift + Drag is not very intuitive/transparent. More hotkeys in general.

The only real way to optimize fun is to calculate it yourself. Make a spreadsheet and work out the level of funpoints/hour (fph) you get from each activity. Some people just say "I blew up this noob's ship, it was so fun lol" but if you're serious...
